What You’ll Need:

  • 3 cups plain mashed potato
  • 1/2 cup chopped ham
  • 2 tbsp chopped chives
  • 1 tbsp salt
  • Gruyere, cut into 1cm cubes.
  • 1 cup flour
  • 3 eggs, beaten
  • 1.5 cups panko breadcrumbs

How You Make It:

  1. Mix together the mash, ham and chives and season with salt. Roll into balls and flatten, place a cube of gruyere in the middle and roll back into a ball, with the cheese in the middle.
  2. Heat the oil to around 170°C/340°F.
  3. Roll the balls in the flour first, then the egg, and finally the panko breadcrumbs.
  4. Fry in batches for around 3 minute, until they’ve turned a golden brown colour.
  5. Serve warm with ketchup and mayonnaise.
