I've heard numerous stories about how good my Grandmother (Dad's mum who sadly I never got to meet) was at making Pavlova, so it's gotta be in my blood right?
Well if the castor sugar situ is anything to go by, this was always going to be a real test.
My approach to all things in the kitchen - rustic and make it up if you need to! Much to the test of my man who is a brilliant baker, very precise and never rocks the boat with recipes. Didn't have enough castor sugar so put normal sugar in food-processor and whizzed it up hahaha, gold!
I think for a first attempt it's pretty good. With our oven, would take 10mins off cooking time.
Here's the recipe, I found it on BITE mag websiteÂ
(disclosure: just realised as I share ingredients list I omitted the water, see told ya, I'm a fly by the seat of my pants kind of kitchen girl #oops)
4 Egg Whites
300gms Castor sugar
2tsp White vinegar
2tsp Vanilla extract (I used Heilala)
2Tbsp Water (I forgot this, still worked and tastes good)
Instructions:
Heat oven to 150C (bake, not fan-bake)
Whisk the egg whites until they form soft peaks, gradually whisk in sugar a little at a time. (this took longer than I had expected)
Add the vinegar, vanilla and water and fold through.
Spoon on to a sheet of non-stick baking paper. Place in the oven and cook for 1 hour. (adapt for own oven)
Turn the oven off, then leave the door slightly ajar with the aid of a teaspoon. (or like me, just as it naturally sits on that part open lever)
Either leave it over night or a few hours to cool and throw on the decorations/toppings.
It tasted ace, cream and deco's hide all!
