An Australian bakery is causing quite a stir with its custard square-cutting technique! Melbourne's Ferguson Plarre Bakehouse, led by the innovative baker Steve Plarre, has turned the custard square game on its side – literally!

In a viral video viewed by over 2.2 million people, Steve Plarre slices custard squares differently, by turning them on their side before making the cut. The result? Two lovely layers of pastry cradle the custard, preventing any oozy mess and preserving the slice's shape.

Plarre's inspiration came from watching diners in New Zealand struggle with messy custard slices, and he couldn't resist sharing his genius solution. His bakery sells between 1000 and 2000 handmade vanilla slices daily, making it a beloved treat in Australia.

While some praise this unconventional method, others remain traditional in their approach. Baker Kheng Sam from Artcraft Bakery in Wellington prefers a small serrated knife to slice his custard squares, while Suzi Bath from Auckland's The Daily Bread uses a paring knife, even in the tin!
