Twelve days 'til Christmas Cocktails: Christmas Mojito recipe

CHRISTMAS MOJITO

INGREDIENTS

For one serving - scale up as needed

  • 1 shot of white rum such as Bacardi
  • 1-2 tablespoons strawberry jam
  • 4-5 strawberries (plus 1 extra to garnish)
  • 2-3 wedges of lime
  • A few good sprigs-worth of fresh mint leaves (plus extra to garnish)
  • Ice
  • Soda Water

METHOD 

  1. Place strawberries, lime, mint and jam in something you can muddle them in (I don't have a muddler so used a pestle in a metal cup. You could also use a potato masher with a bowl, or even a spoon in your glass if you're able to give it a good squish). Adjust the amount of jam based on how sweet or sour you want your mojito. And muddle!
  2. Fill a tall glass with ice and pour in the rum. 
  3. Add the muddled mix, top with soda water and give it a good stir.
  4. Take the spare strawberry and, cut lengthwise about two thirds of the way up from the point, keeping the stem end in-tact. Use the slit to position the strawberry on the edge of the glass. Garnish with extra mint leaves.
  5. Enjoy!
